Myeloma Action Month

Myeloma Action Month is spearheaded by the International Myeloma Foundation to help raise awareness about myeloma and help patients be diagnosed more quickly.

This year’s Myeloma Action Month campaign focuses on individuals like YOU – Myeloma Warriors – who are surviving with the disease, supporting loved ones, or helping to find the cure. The campaign’s official hashtag is #myelomawarrior.

Susan’s Pineapple Casserole

 

2 – 20 oz cans of crushed pineapple, drain and save the juice

2 cups grated sharp cheddar cheese

1 cup margarine

2 stacks of Ritz crackers or 1 ½ boxes of gluten free cheese crackers (Van’s and Lance are good)

2 tablespoons flour; can substitute with gluten free flour

1 cup sugar

8 tablespoons of pineapple juice

 

Pour crushed pineapple in a casserole dish and cover with the grated cheese.  Boil ½ cup margarine, sugar, flour, and pineapple juice.  Cook until thickened.  Pour over the pineapple and cheese.  Crush crackers over the top.  Melt ½ cup margarine and pour over crushed crackers.  Bake at 350 degrees for 30 minutes.
